The Lazy Baker


Hi, I am Marie & I am a biscotti-aholic.

This is the 3rd time in 2 months that I have made a new biscotti recipe.  I cannot get enough!  While most people are making resolutions to eat less baked goods, I am making resolutions to eat more.  Honestly the better quality of food I eat, the better I look & feel.  That's my reasoning & I am sticking to it.

The thing I should be working on though is not being so lazy in the kitchen.  Examples?  I have plenty:

Sometimes I forget I can't do more than one thing at a time and when I get the itch to bake I can end up juggling 2, 3 or 4 things at once.  Following that many recipes simultaneously can make for a few mistakes.  I guess this isn't so much lazy as delusional.

The first rule of thumb any good cook knows is to read through the whole recipe first.  Of course I admonish everyone to do this.  Do I?  Of course not.  Usually it's not a big deal but on more than one occasion it's come back to bite me in the behind.

Sometimes instead of softening my butter I zap it for 8 or 9 seconds in the microwave.  Bad baker, bad, bad, bad.  I know softened butter creamed with sugar results in a fluffy creamy mixture full of air bubbles and melting even ever so slightly can ruin that.  I have no excuse.  Yeah I do, I am lazy.

Not sure if this qualifies as lazy or a stroke of genius.  I've learned I don't need to wash my measuring cups, teaspoons or cookie sheets.  Just wipe em all off with a dish towel.  It has literally changed my life.   Unless honey or oil is involved, those babies are getting a quick wipe and back in the cupboards they go.

I can be so busy thinking about when I'll have time to watch my DVR'd  Bachelor and whoops, too much baking soda.

I have about 100 recipes piling up on my cookbook stand even though I claim to be organized.  At least I am not too lazy to make them.

I used all white flour in the Biscotti today because my kids weren't home to grind wheat...........

.............which is ironic seeing that first thing this morning I was on the phone to all the health food stores in Temecula to see if they carried whole dried corn so I could grind my own cornmeal for the biscotti.  They don't.  Frowny face.  (The lazy baker is also lazy with technology and doesn't know how to add in those yellow frowny faces.  Or happy faces for that matter.)

The lazy baker has tons of cute aprons from every goodwill in CA.  I never wear any of them.  Too lazy.

The lazy baker would rather be a lazy baker than a bad baker.

  1. This post cracked me up! I can't imagine making more than one recipe at a time. I can barely handle one and I often have to go to the store in the middle! And...your post really made me want to try making biscotti!

    1. I am so bad at meal (&snack) planning. Sometimes I'll go to the store 5 days in a row for groceries, or just one ingredient. Good thing it's just down the street from me.

  3. I've never tried to make biscotti, but do love it! I'm a lazy baker too - with so many too cook for, I look for the fastest way to get things done. I have one cute apron, but never wear it because I don't want to get it messed up!

  4. I've been obsessed with finding good oatmeal cookies recently without TONS of sugar like my beloved oatmeal scotchies...any good ones you know of?

  5. I can't juggle recipes. I stink at multitasking, but girl, I most def wipe and put away my measuring spoons, etc. Oh yes.

  6. Reading this was like reading something I could have written about myself! :o) I am right there with you! I am infamous for never reading through a recipe beforehand, microwaving my butter, and never washing the measuring cups. Sometimes, and this is bad, I won't even rinse the teaspoon off after using it. I'll just blow on it to knock any residual salt granules (or any other spice) off. :o)

  7. The best part of being a lazy baker? Being too lazy to wait for goodies to bake. Raw/half-raw-but-warm cookie dough? No better incentive for being lazy and not completing the cooking process.

    And oh, I feel you on tackling ten cooking projects at once. If I'd just go to the kitchen and make ONE thing, I'd have a lot more success (or at least be a lot less scattered).

  8. I can't bake, period. I have no patience!! That's why I almost only ever cook.
    Making biscotti seems so daunting to me... but then again, so do most baked desserts. :)

    1. I would not have guessed, your food always looks so mouthwatering. It's funny because I find cooking more daunting. With baking everything is exact. And meat, uggggh, I usually have Glenn just grill it.

  9. Baked goods sound yummy right now! Whenever I'm baking my little man goes to the pantry and hands me an apron, it's the cutest little thing ever. Home ground cornmeal sounds awesome...I love the texture! Happy Baking!!

    1. I am a sucker for anything with cornmeal in it. Pancakes, waffles, bread, cookies. As soon as I saw this recipe I knew I would love them.

  10. Alright, lazy baker-luckily for you, you can be a lazy baker and the best baker! :) No laziness here in the baking realm or all of my "treats" would taste like dirt. Hahaha.

    I have all of the ing. for the biscotti, I'm going to try my hand at it. I've never done it before, wish me luck. I'm going to start it in awhile.

    I'm glad you discovered "wiping" down cookie sheets etc., I've been doing that for years. Much better for our sanity in the kitchen. :) I loved this post, you are creative and cute. Makes me miss you a lot. Love you,

  13. I have probably 10 aprons (2 of which have a matching apron for my daughter)...needless to say we never wear them, because (get this) I don't want to get them dirty. Seems a little backwards.
    That biscotti looks wonderful. I tried it once and was not terribly successful (read it looked pretty ugly) but it was very tasty. I need to give it another go.
    I am so thoroughly enjoying your blog and I have to say I would love to see a post where you could show us your thrift store finds. I love to duck into those places and I am always encouraged to see what others happen upon or what "trash" you turn into "treasure."

      And I love ugly, rustic homemade food, I really do find it more charming than food that looks all perfectly the same.

    In MY humble opinion, biscotti is wonderful ONLY if it is hard!

  16. I am a lazy baker, and this post speaks straight to my haphazardly measured measuring cups (scrape off the top? pack down the brown sugar? pssshhh) and microwaved buttah :-)

  20. Biscotti is a highly underappreciated baked good. I love dipping it in black tea. I've never made it myself though. And milling your own flour! Quite impressive.

  21. Thanks for linking back , Marie. Your biscotti looks gorgeous! I have more reasons to cringe when i look at my own not so pretty looking creation. You were right about the butter bit. I changed that in my recipe and Dorie had it right too.. wonder what I was thinking while reading her recipe. I read it twice!! Speaks a lot about my focus and attention.
    We all are lazy bakers. I hate cleaning up so I try and do it together, else I look for short cuts like you do.

  24. yes, it is definitely better to be a lazy baker than to be like me. i seriously can not bake. i just don't have the gift.
    but i say there is nothing wrong with being a biscotti-holic. at least you are embracing it :)

  25. I believe in good quality baked goods as well, BUT I still can't make them because I want to eat more than I should. MAYBE when the kiddos like that kind of stuff it will be shared. But still, nuts are a better snack ya know? Biscotti is so tasty though! You are a pro at it now!

    1. It is challenging making only stuff I like cause then I eat it all. But I freeze everything. Double ziploc it and into the freezer so it lasts a while.

I wanted to say I have had trouble commenting on your blog and a few others from blogspot, but then some others from blogspot I have had no problem. The comment box pops up and then disappears.
