Pumpkin Cream Cheese Muffins

Another October day, another pumpkin baked good.  I actually felt legit making these as the weather in Southern California is finally feeling like Fall.


It even rained yesterday, a lot.  And my kids wore pants to school.  I had to remind them that they're just like shorts.......only longer.

Eating pumpkin muffins & reading library books all evening to the kids with the rain pouring down outside is my idea of perfect.  And finding a brand new Arthur book at the library, about being GREEN!  Oh my gosh I grabbed that book (you know since everyone else obviously wanted  it) and checked it out asap.  I feel like I have inside information because I know where they stock the brand new library books.  What?  Everyone knows?  Darn!

Back to THESE delicious, I believe knock off Starbucks, muffins.  Make them.  Of course I made some changes.  2 cups whole wheat flour & 1 cup white , 1.5 cups sugar (instead of 2), and I just set out my cream cheese the night before and whipped it up in the morning and used a spoon to scoop a dollop into the muffins.  I've made these a few times and I don't think freezing the cream cheese mixture is necessary.



                  
Lila's reading a Mad Magazine about Harry Potter.  Ethan's reading Babaar.  It's their version of the New York times.  And of course it being winter and all you can't get your day started without your morning (sippy) cup of coffee  hot choc!  I am off to find more cans of pumpkin.  I think this weather might be sticking around for a while.

  1. Oh, yum! These look amazing and that sounds like a perfect evening. I wish I were better in the kitchen. (Or had any skill whatsoever.) It's going to be fun to attempt to bake cookies and other goods with my little girl though. :)

  2. Hey, these look great. Thank you for this recipe I'll be making them today, I have plenty of cream cheese and I just bought pumpkin from Costco. It comes in a three pack, not sure it's the best deal but it was there and convenient. It's cold and rainy here and was yesterday too. I am making that beef stew right now that you posted what seems like forever ago. I'll never make another, it's the best. Hey thanks for the comment about my kids being angelic, but they are no more than yours. I only posted the cute parts of conference. Both morning sessions Kirk was "raising his voice" telling Kalen to get with the program as Kalen thought the couch in the back room was going to be just for him to lay on. And then Kalen proceeded to do this same thing on Sunday morning? Hmmm, sometimes it's funny that the oldest child acts like the youngest. So both mornings I was standing in the kitchen thinking, "okay, so we've starting conference off with a bit of shouting," great....what can you do? Love you,\
