One of my favorite dinners is a Cafe Rio inspired pork salad. I put a 6 lb pork roast in the crock pot last night with brown sugar, Worcestershire and other spices and set it on low all night.
We serve it with black beans, cilantro lime rice, chips, corn pudding, pico de gallo, avocado, limes, flour tortillas, cheddar, lettuce and a cilantro dressing. When there's this much food involved it's nice that we can split the work between my mom, Jeannette and I. Also nice that I have friends who bring whole wheat peanut butter chocolate bars, they were so good. It's actually a recipe of mine and I gave it to her and can't remember where it's from. It's probably better that way.
Emry getting some sewing tips from my mom after dinner. Since I've realized I cannot now and will never sew I told Emry to have at it, it's all hers now. She made a purse out of a T-shirt tonight, it's a start.
Emry also sporting her new short hair. She cut off about 8 fried chlorinated inches.
Lila working on a friendship bracelet. Can't have Emry outshine her in the craft department. Lila also looking like she needs her hair chopped off. We love to live in the pool but man it wrecks my kids hair.
I asked Emry to get some shots of us all but she missed our lovely friends and only got Glenn & I. I guess we're her favorites. Or she got sidetracked by something cooler than our guests, like a praying mantis.
I also need to ask her to please make sure we look good, c'mon Emry. Glenn & I may be super dorky but at least if she got a good shot of us we could pretend we weren't.
I took this one of my beautiful sister Jeannette and her daughter Kylee. She's almost done with her 3 months of training at the hospital and is an R.D. all on her own, what a grown up.
Seriously though she's finding it very challenging working and keeping up with her kids while being a single mom. She has a wonderful attitude though and enjoys her crazy busy life nonetheless.
There's nothing I find funnier than people on cell phones. Maybe it's because I don't have one but it seems they are pretty much an appendage of most people. I can be in a group where everyone has their cell out making deals, checking in or I don't know, doing whatever they do. Teens especially can't be without one, I am sure life as they know it would end.
(on that note I've taken Emry's Ipod touch away because it annoys me (shocker!!!) not for good, but it has to be on my terms, yup, I am that controlling)

Haha its true that the phone has become another appendage. When I Watched the grammys with friends, every single one of us had our iphone out and we were like real time tweeting the event. It was so ridiculous!

ReplyDeleteYes our friends moved and Glenn came home with it, a big table and six chairs. I have been wanting a patio table to dine al fresco and since there is no money for one this was perfect. I just have to weather proof it somehow because it's wood. Yes my mother and all her funky braids, I guess that's where I get it.

My hubby always threatens to give his up, but in the same breath says he wants an iphone like mine. My girls sew and love it. My mother-in-law taught me when I was pregnant with my first daughter. It was a gift!
ReplyDeleteSewing is such a wonderful skill. I think you can find clothes cheap enough but mending and making baby blankets and curtains, so useful. There is a post titled 'Textbook' under the 'favorite' headings where I talk about why I don't have a cell phone.

Kind of a lost art huh. Making blankets and mending comes in so handy. It's fun to give kids the opportunity and see what they come up with.

ReplyDeleteI love all the family pictures! I would LOVE to have hair as dark as yours sisters. I kept trying to dye it dark last year, but it just faded too quickly, so I gave up. Guess I'll be a mousy brunette forever. :o/
She has naturally dark hair but she had just dyed it that morning to cover grays and used a different shade than normal, it was much darker than she usually uses.
DeleteI dyed my hair dark last October and it washed out pretty quick. Unless you're willing to pay good money every 4-6 weeks I find it so much easier to just stick with the color you have.
That pork salad looks delicious and I think my husband might even eat it. It's nice to see one of your kids taking an interest in sewing. I love to sew and I'm trying to teach my oldest but she doesn't have much passion for it yet.

ReplyDeleteWhen my step-son moved to Texas, I set up his old room and now that's her sewing room - she gets fabric from my sister who works at an architectural firm - some of those fabric swatches are $125 a yard! She uses those pieces as accents on her purses - so cute!
Wowza! Material can be expensive, and so can patterns. I leave it up to the experts. You know those people who sell their wares to Target and Marshalls.

My MIL keeps trying to buy us a DVD player for the car and doesnt understand why I wont accept it. I think kids needs to have some time to enjoy everything else around them, not just on the tv. Cullen and I have some of the best convos in the car!
ReplyDeleteI agree. We bought our minivan 7 years ago and it came with a t.v. which we haven't used in years. We would use it during road trips but now that all the kids can read I would rather them do that.
DeleteI am a mess with technology and anything electrical and one such roadtrip when all the kids were small I did on my own because my husband was out of the country. Of course I couldn't get the t.v. to work right and didn't know how to turn on the sound. They didn't care, they were starved for t.v. and watched 2 'silent' movies. Quietest trip ever.

This entire food lineup is a lot but it is so good!!! We've made it many times and I have it all down to a science.

You've gotta make the corn pudding, it puts it all over the edge. Mine is made with a package of Jiffy cornbread mix, 2 eggs, 1 cube butter, 8 oz sour cream and a can of creamed corn. So delicious.

ReplyDeleteI do it all homemade but you could easily do beans from a can, store bought dressing etc. I find that once you make something a few times it becomes a ton easier.

I am totally out of denial. I've tried a few times and it just isn't in me to sew. If you love Cafe Rio you should try your hand at this recipe, it's great for a crowd.

ReplyDeleteI don't know which photo I like best! Emry's hair is so pretty, the food looks yummy and everyone else looks great too. I'm with you on the cell phone thing. It's handy to have one, but it doesn't need to be attached to you all every waking moment. Mine lives in my purse when it's not being charged 'cause there's no way I'd be able to find it if I left it elsewhere and I only really need it when I'm out!

Awesome pictures and dinner with your family! The Cafe Rio pork is my fave...I have a different copycat recipe and LOVE it! It's so fun to make it at home with all the yummy fixin's and load in the pork without someone yelling 'extra meat'!
